Easy Epirus spinach pie
 

Ingredients for 4 servings

Organic spinach leaf 450g. 1pack

Fresh onions chopped 3 pcs.

1 bunch chopped dill

Feta cheese 100g.

Olive oil 200g.

Corn flour or polenta 500g.

Salt, pepper and some water

 

We cover the bottom of a small pot with a little olive oil and we lightly fry the chopped onions.

Add spinach and saute until is thawed and  evaporated its fluids.

We place the sautéed spinach in a bowl and we add the feta cheese broken into bits, the dill, the salt and pepper and then we mix well.

We take a round baking pan (22-24 cm) and we put a little oil in it. We cover the bottom of the pan with half the corn flour and then we soak with a little water.

We add the stuffing on top and we lay it  with the help of a spoon.

We cover the surface of the pie with the remaining corn flour and we soak as well with water.

We bake the pie in a preheated oven at 170 C for 20-25 minutes.

 

 

Chef’s Tips :

Differentiate your pie by slaking your spinach with a shot of ouzo

Add in the staffing a spoonful of Pine Nuts

Bake the pie  until it’s “brown”, the cooking time may vary according to the type of the cooking machine.
